Veggie Fry Nachos &
COOKING IS SIMPLE!
Ingredients
- 3 cups Path of Life Gluten-Free Veggie Fries
- 4 bacon strips, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1 medium ripe avocado, diced
- 1 plum tomato, seeded and diced
- 1/4 small red onion, diced
- 2 tbsp fresh lime juice
- 2 tbsp chopped fresh cilantro
- Salt to taste
- 1 green onion, thinly sliced

- Preheat oven to 400F. For guacamole, combine avocado, tomato, onion, lime juice, cilantro and salt in a small mixing bowl. Mix well and set aside.
- Prepare Veggie Fries according to package directions. Transfer fries to a small sheet pan and sprinkle with cheese. Bake 3-4 minutes or until cheese is melted. Place on a serving platter. Top with guacamole and green onion. Serve immediately.
