Tuscan Quinoa Minestrone &

Ingredients
- 1 Bag (40 oz.) Path of Life Tuscan Quinoa Blend, cooked according to package instructions
- ΒΌ cup Olive Oil
- 3 Red Bell Peppers, diced
- 5 quarts Chicken or Vegetable Broth
- 1.5 quarts Marinara Sauce
- Fresh Basil, chopped (optional)
- Parmesan Cheese (optional)

Instructions:
1. Heat oil in a medium saucepot over medium heat. Add pepper and cook 5 minutes.
2. Stir in broth and marinara sauce. Simmer for an additional 5 minutes.
3. Add Tuscan Quinoa and simmer an additional 5 minutes. Transfer to serving bowls and garnish with basil and Parmesan, if desired.
