Grilled Chicken Pulse Mélange Salad &

Ingredients
- 1 lb boneless, skinless chicken breast, pounded to ½-in. thickness
- 2 tbsp olive oil
- Sea salt and ground black pepper, to taste
- 6 cups arugula salad mix
- 2 cups Path of Life Pulse Mélange, cooked according to package direction and cooled completely
- 1/2 cup Italian dressing

- Heat grill over medium heat. Brush chicken with olive oil and season with salt and pepper. Grill 5 minutes per side or until internal temperature reaches 165°F. Cool completely and dice into ½-in. pieces.
- Combine salad mix, Pulse Mélange and chicken in a medium mixing bowl. Mix well. Transfer to a serving platter and serve with dressing.
