Flavors of Greece Cucumber Salad &

Ingredients
- 1 Bag (10 oz.) Path of Life Mediterranean Quinoa Blend, cooked according to package instructions, cooled to room temperature
- 2 Large Cucumbers, spiralized (about 4 cups)
- 1 Can Chickpeas, rinsed and drained
- ½ Cup thinly sliced Red Onion
- ½ Cup Halved Greek Olives
- 1/3 Cup Greek Vinaigrette
- ¼ Cup Crumbled Feta

Chef’s Tip: Spiralized Cucumber is great- but chopped or sliced Cucumber is just as delicious in this refreshing Salad.
1. Combine the first 7 ingredients in a large bowl; toss gently to combine. Top with optional garnishes, as desired.
