5-Grain Blend with Bacon & Veggies &
COOKING IS SIMPLE!
Ingredients
- 1lb (4 cups) assorted baby tomatoes
- 4 garlic cloves, thinly sliced
- 2 tbsp olive oil
- Sea salt and ground black pepper, to taste
- 1lb thick-cut bacon, diced
- 2 shallots, minced
- 6 cups Path of Life 5-Grain Blend
- 8 cups baby spinach
- 1/2 cup finely grated Parmesan cheese
- Shaved parmesan and torn basil leaves (optional)

- Heat a large skillet over high heat until very hot. Add tomatoes and cook undisturbed 1-2 minutes or until charred. Stir and cook an additional 1 minute. Stir in garlic and olive oil. Cook an additional 1 minute or until garlic is fragrant. Season to taste with salt and pepper. Set tomatoes aside.
- In a clean pan, cook bacon over medium-high heat 10-12 minutes or until crisp. Drain bacon leaving 2-3 tbsp of drippings in the pan. Add shallots and cook 10-20 seconds or until fragrant. Add 5-Grain Blend. Cook an additional 6-8 minutes or until heated through, stirring frequently. Stir in spinach, Parmesan and half the bacon.
- Transfer grain blend to serving plates. Top with remaining bacon and tomatoes. Sprinkle with shaved parmesan and torn basil leaves, if desired.
