Chicken Niçoise Quinoa Salad &

Ingredients
- 1 bag 2.5 lbs (about 12.5 cups frozen) Path of Life Mediterranean Quinoa
- 2 cups diced cooked chicken
- 2 cups diced tomatoes
- 1 cup niçoise or Kalamata olives
- 4 hard-boiled eggs, cut into quarters
- Balsamic or red wine vinaigrette (optional)
Cookware
instructions
- Cook Mediterranean Quinoa according to package directions and cool to room temperature.
- Transfer quinoa to serving plates and top with chicken, tomatoes, olives and eggs. Drizzle with
dressing, if desired.
