Quinoa Hash Brown, Bacon&Egg Casserole &

Ingredients
- 12 Large Eggs
- 1 can (12 oz) evaporated milk
- 2lbs (8 cups) Path of Life Red Quinoa Hash Browns
- 2 cups shredded white cheddar cheese
- 1lb bacon, cooked and crumbled (2 cups cooked)

- Preheat oven 350°F. Whisk eggs and evaporated milk in a large mixing bowl. Add hash browns, cheese and bacon. Mix with a rubber spatula until well-blended. Pour into a greased 9 x 12-in. baking pan.
- Cover with foil. Bake 60-70 minutes or until internal temperature registers an internal temperature of 165°F in the center of the casserole.
- Remove from oven and let stand 10 minutes before serving.
